Lemony Lemon Cake
I havn’t posted in a while…its mostly because i have been focusing on christmas presents, so they will have to stay under the radar until after the holidays :)
So instead I offer another Recipe Review! I made this cake in the summer, but I still think a lot about it, and day dream about the taste!
Recipe: I used the epicurious Lemon Layer Cake recipe, with a few minor modifications.
Modifications: Instead of using rice flour, I substituted all-purpose flour because that is what I had on hand. I also omitted the xanthan gum and guar gum in the cake and lemon curd, respectively. It turned out well with these modifications, although I would recommend cooking the curd for a bit longer if you don’t use the gum.
I also decided to add a garnish of red currants, as seen in the photo. They were very pretty, like a string of pearls and the tartness of the currants went well with the fresh lemony cake!
Comments: The cake turned out fluffy and amazing, the lemon curd was delcious and the frosting was light and creamy! What more could you ask for? You can definitely taste the fresh lemony goodness in this one. The only thing I would change for next time is to make more curd and more frosting. I would definitely recommend this to anyone that loves a lemony treat!
